Tofu Breakfast Burritos

Meal prep a bunch of these on the weekend and you'll be set for a week of healthy vegan breakfasts.

A quick, easy and healthy breakfast recipe.

One package firm or extra firm tofu

A tablespoon or so of Nutritional Yeast

A teaspoon or so of liquid smoke

Your choice of spices – garlic powder, onion powder, cumin, turmeric, chili powder

Shredded vegan cheese

Low carb tortillas

Drain tofu and tear apart with your hands into a bowl. Mash with a fork to desired consistency.

Add nutritional yeast, liquid smoke and desired spices. I don’t measure the spices but use between a half teaspoon and a teaspoon of each.

Mash and mix tofu and spices until combined.

Heat a nonstick skillet on medium high heat. Add tofu mixture and cook to desired texture, around five minutes. Add vegan cheese and stir until multed.

Place a good portion of tofu on a tortilla and top with cilantro and salsa. Roll up into a burrito.

Serve with a side of berries or fruit.
