Vegan Soft Tacos

A delicious vegan dinner you can make in 20 minutes.

This is a very easy and nutritious dinner that is quick to prepare.

Low carb tortillas

Morning star farms crumbles or similar

1/2 onion, chopped

1 red bell pepper, chopped

1 large jalapeno, chopped

Tablespoon of taco seasoning or chili powder

Salsa

Slaw – cabbage or kale or a mixture, onion, jalapeno or another pepper, tomato, cilantro, salt, lemon or lime juice.

Prepare the slaw first by chopping and combining all ingredients in a bowl.

Combine crumbles, onion, bell pepper, jalapeno and taco seasoning in a non-stick skillet over medium high heat. Cook until crumbles are brown, about five minutes.

Place a good portion of the crumble mixture on a tortilla and top with salsa and slaw.
